Chia Seeds

Chia seeds may be tiny, but they’re wonderfully versatile. They absorb liquid and develop a soft, gel-like texture, making them perfect for puddings, overnight oats, smoothies, and baking.

They are naturally a source of fibre, omega-3 fatty acids, and plant-based protein. Because chia seeds absorb a lot of liquid, we recommend enjoying them well soaked or with plenty of fluid.

My go to recipe
Simple Chia Seed Pudding

Ingredients

3 tablespoons chia seeds
¾ cup milk
1 teaspoon honey, or to taste
A small splash of vanilla essence
A sprinkle of cinnamon

Method

Mix everything together well and leave for 5 to 10 minutes. Stir again to break up any chia clumps, then cover and refrigerate for at least 2 hours, or overnight.

Give it a final stir before eating. If it’s too thick, simply add a splash of milk.

Enjoy as it is, or top with fresh or dried fruit, honey, or nuts.
