Description
Blackberries are juicy, deeply coloured berries with a sweet flavour balanced by a pleasant tartness.
They can be eaten fresh or used in jam, sauces, desserts, smoothies and baking.
Blackberries are best allowed to ripen properly before picking. Once ripe, though, the berries become soft and bruise easily, so they need gentle handling.
A little tip: Freeze excess blackberries individually on a tray before transferring them to a freezer bag. This stops them freezing into one enormous berry meteorite.
Blackberry Sauce
Ingredients
1 cup blackberries
2 tablespoons sugar or honey
1 tablespoon water
Squeeze of lemon
Method
Place everything into a small saucepan.
Cook gently for 10 to 15 minutes, stirring occasionally.
Lightly crush the berries as they soften.
Allow to cool.
Serve with yoghurt, ice cream, pancakes or cheesecake.
Tammy’s tip: Try this with roast duck if you want to get slightly more adventurous. Blackberry and rich meat are surprisingly good friends.
