Description
Dragon fruit is the brightly coloured fruit of a climbing cactus. Beneath its dramatic pink or red skin is soft flesh filled with tiny edible black seeds.
The flavour is mild, fresh and gently sweet. It can be eaten fresh, chilled, added to fruit salads, smoothies or frozen into simple desserts.
Dragon fruit plants are also incredibly interesting to grow, with large night-opening flowers.
A little tip: Chill the fruit, cut it in half and scoop the flesh out with a spoon. No culinary wizardry required.
Dragon Fruit Cooler
Ingredients
1 dragon fruit
Juice of 1 lime
500 ml cold water
Ice
Method
Scoop the dragon fruit flesh into a jug.
Lightly crush the fruit.
Add lime juice and cold water.
Stir well and serve over ice.
Tammy’s tip: If you have a red-fleshed dragon fruit, accept now that your kitchen may look slightly incriminating.
