Description
Leeks have a mild, sweet onion flavour and are wonderful in soups, stews, pies and roasted vegetable dishes.
Both the white and pale green portions are commonly used in cooking.
Leek & Potato Soup
Ingredients
2 leeks
3 potatoes
1 litre stock
Butter
Salt and pepper
Method
Slice and wash the leeks well.
Cook gently in butter until soft.
Add chopped potatoes and stock.
Simmer until the potatoes are tender, then blend until smooth.
Season to taste.
Tammy’s tip: Wash between the leek layers. Leeks are remarkably committed to smuggling soil into soup.
