Mixed Farm Duck Eggs
Our mixed farm duck eggs come from the different ducks wandering, splashing, foraging, and generally creating chaos around Flying Goose Homestead.
Because we keep a mixed flock, egg size, colour, and shell appearance can vary. You may find white, cream, blue-green, or slightly tinted eggs in your box. Duck eggs are generally larger than chicken eggs, with a thicker, tougher shell and a slightly waxier feel.
Duck eggs are larger and richer than chicken eggs, with generous yolks and firm whites. They can be used anywhere you’d normally use a chicken egg and are especially lovely for baking, cakes, custards, French toast, and rich scrambled eggs.
Using Duck Eggs
As a simple guide, 1 duck egg is roughly equal to 1½ large chicken eggs, although our eggs naturally vary in size.
For everyday cooking, simply swap them into your favourite egg dishes. For precise baking recipes, we recommend weighing the egg without the shell for the best results.
Tammy’s tip: Try duck eggs in your next cake or batch of brownies. Their larger yolks and higher fat content can give bakes a wonderfully rich texture.
Our eggs are intentionally left unwashed to protect their natural bloom. Ducks are not the tidiest creatures, so simply wash your eggs just before use.
