Description
Lemongrass is a wonderfully fragrant herb with a fresh, citrusy flavour. Despite the name, it isn’t a lemon at all. It’s a tropical grass, and the stalks and leaves are commonly used to flavour teas, soups, curries, marinades, and stir-fries. It loves warmth and sunshine and can grow into a surprisingly large clump.
A little tip: lemongrass can be quite tough and fibrous. For cooking, bruise or crush the stalk before adding it to release more flavour. You can remove the larger pieces before serving.
Simple Lemongrass Tea
Ingredients
1 fresh lemongrass stalk or a small handful of chopped leaves
2 cups water
1 teaspoon honey, or to taste
A small squeeze of lemon, optional
Method
Bruise the lemongrass with the back of a knife or rolling pin, then roughly chop it.
Add to a small pot with the water and gently simmer for 5 to 10 minutes.
Strain into a cup, add honey to taste, and enjoy warm.
Tammy’s tip: Try it cold too! Let the tea cool, refrigerate, and serve over ice for a simple refreshing drink.
