Liquorice Root

Description

Liquorice, Glycyrrhiza glabra, is a perennial plant grown for its wonderfully aromatic, naturally sweet roots. The root is used as a flavouring in teas, sweets and drinks, and has an earthy flavour with notes often described as anise-like and slightly resinous.

The roots are normally allowed to mature for several years before harvesting. They can then be washed, cut and dried, and used whole, chopped or ground.

A little tip: Liquorice root is naturally very sweet and has a lingering flavour. Start with a small amount. This is definitely not a herb that whispers politely from the back of the cup.

Liquorice & Ginger Tea

Ingredients

1 teaspoon chopped dried liquorice root
2 to 3 thin slices fresh ginger
2 cups water
Lemon, optional

Method

Add the liquorice root, ginger and water to a small pot.

Bring to a gentle simmer and cook for 5 to 10 minutes.

Remove from the heat, strain and taste.

Add a squeeze of lemon if you like.

Tammy’s tip: Taste before adding honey. Liquorice root brings quite a lot of its own sweetness to the party.

⚠️ A Little Note About Liquorice Root

Enjoy occasionally and in small amounts. Liquorice root may affect blood pressure and potassium levels and may interact with medication. Not recommended during pregnancy. If you have high blood pressure, heart or kidney problems, or take regular medication, seek medical advice before use.
