Loquat Sauce: R50 / 250 ml

Description

Loquats are small golden-orange fruits with soft, juicy flesh and a sweet, gently tart flavour.

The fruit is delicious fresh and can also be used in jam, chutney, sauces and desserts.

Loquats are best allowed to ripen properly on the tree and have a relatively short shelf life once picked.

A little tip: The large seeds are not eaten. Remove them before cooking or blending the fruit.

Loquat Compote

Ingredients

500 g ripe loquats
2 tablespoons sugar or honey
½ cup water
Squeeze of lemon

Method

Wash the loquats.

Cut them in half and remove the seeds.

Place the fruit, water and sugar into a saucepan.

Simmer gently for 15 to 20 minutes.

Add a squeeze of lemon.

Serve with yoghurt, oats or ice cream.

Tammy’s tip: This is a good rescue recipe for soft ripe fruit that has passed the glamorous fruit-bowl stage of its career.
