Cold Marshmallow Root Infusion
Ingredients
1 teaspoon dried marshmallow root
1 cup cool water
Method
Place the dried root in a jar with the water.
Leave to infuse for several hours.
Strain thoroughly.

Don’t expect a mug of melted marshmallows. The flavour is mild and earthy. The plant has suffered terribly from confectionery-based expectations.
