Description
Pineapples are sweet, juicy tropical fruits with a wonderfully sharp acidity that stops them becoming overwhelmingly sweet.
They can be eaten fresh or used in chutneys, sauces, cakes, drinks, jams and savoury dishes.
The leafy crown can also be used to grow another pineapple plant, although you’ll need some patience. Pineapples are not known for respecting urgent deadlines.
A little tip: Don’t throw the core away. Chop it finely for chutney or use it to flavour water.
Pineapple Chilli Salsa
Ingredients
1 cup fresh pineapple
1 spring onion
Small amount of fresh chilli
Juice of ½ lime
Pinch of salt
Method
Finely chop the pineapple.
Slice the spring onion and chilli.
Mix everything together with the lime juice and salt.
Leave for 10 minutes before serving.
Serve with pork, duck, chicken or quail.
Tammy’s tip: This is particularly good with pork. The pig and pineapple have apparently entered into a very successful business arrangement.
