Salsify

Description

Salsify is an unusual root vegetable that looks a little like a long, scruffy root but has a mild, delicate flavour.

The roots are peeled and cooked much like other root vegetables. They can be boiled, mashed, roasted or added to soups and stews.

This is precisely the sort of vegetable the Homestead Boxes were invented for because I can almost guarantee someone is going to hold it up and ask, “Tammy, why have you sent me a stick?”

A little tip: Peeled salsify can discolour quickly. Place it into water with a little lemon juice while you prepare the rest.

Buttered Salsify

Ingredients

2 to 3 salsify roots
1 tablespoon butter
Salt
Black pepper
Squeeze of lemon

Method

Peel the salsify and place it into lemon water.

Cut into short pieces.

Boil for 15 to 20 minutes, or until tender.

Drain well.

Toss with butter, salt and black pepper.

Finish with a small squeeze of lemon.

Tammy’s tip: Start here before attempting anything elaborate. First establish that you and the strange root are friends.
