White Elderflower

Elderflower Syrup: R50 / 250 ml

Description

Elderflower comes from the elder shrub and produces beautiful clusters of tiny, creamy-white, highly fragrant flowers.

The flowers are traditionally used to make cordials, syrups and infused drinks. Sambucus nigra flowers have a long history of culinary use, particularly in cordials and flavouring.

For Flying Goose, I would only sell elderflower from positively identified culinary elder plants.

A little tip: Shake flower heads gently to remove insects rather than aggressively washing away all their fragrance.

Elderflower Cordial

Ingredients

10 fresh elderflower heads
500 g sugar
750 ml water
2 lemons

Method

Heat the sugar and water until the sugar dissolves.

Remove from the heat.

Add the elderflowers and sliced lemons.

Cover and leave to infuse in the fridge for 24 hours.

Strain well.

Keep refrigerated and use diluted with cold water.

Tammy’s tip: Check the flowers for tiny passengers first. Cordial does not require surprise protein.
