Description
Bananas are one of the most familiar fruits around, but that doesn’t make them boring.
They can be eaten fresh, frozen for smoothies, baked into cakes and breads, fried, dried or turned into preserves.
Very ripe bananas are often the best for baking because their flavour becomes sweeter and stronger.
A little tip: Don’t throw away ugly overripe bananas. Peel and freeze them. Future smoothie-you will be extremely pleased with past banana-you.
Banana Bread
Ingredients
3 very ripe bananas
2 eggs
100 g melted butter
½ cup sugar
1½ cups flour
1 teaspoon baking powder
Pinch of cinnamon
Method
Heat the oven to 180°C.
Mash the bananas.
Mix in the eggs, melted butter and sugar.
Fold in the flour, baking powder and cinnamon.
Pour into a greased loaf tin.
Bake for approximately 40 to 50 minutes, or until cooked through.
