Description

Jackfruit is one of the largest tree fruits in the world and can grow to an absolutely ridiculous size.

Ripe jackfruit contains sweet, fragrant yellow fruit bulbs that can be eaten fresh. Young green jackfruit has a much milder flavour and fibrous texture, making it useful in savoury dishes.

One fruit can weigh tens of kilograms, so selling the whole thing is not always practical. Large jackfruit commonly reach around 20 to 30 kg, with exceptional fruit growing considerably larger.

A little tip: Oil your knife and hands before cutting jackfruit. The sticky latex has ambitions of becoming a permanent member of your kitchen.

Pulled Green Jackfruit

Ingredients

500 g prepared young green jackfruit
1 onion
1 tablespoon oil
½ cup braai or barbecue sauce
Salt and black pepper

Method

Cook the prepared jackfruit until tender.

Drain and pull the flesh apart with two forks.

Fry the chopped onion in oil until soft.

Add the jackfruit and sauce.

Cook gently for 10 to 15 minutes.

Serve on rolls or with rice.
