Description
Rose geranium is a beautifully fragrant Pelargonium with leaves that release a strong rosy scent when touched.
Rose-scented Pelargonium leaves and flowers have culinary uses in cakes, jams, jellies, ice cream, sorbets, flavoured sugar and tea, but the exact cultivar matters because plants sold under “rose geranium” aren’t always botanically identical.
Rose Geranium Sugar
Ingredients
1 cup sugar
2 clean, correctly identified rose geranium leaves
Method
Place the sugar and leaves in a sealed jar.
Leave for 2 to 3 days.
Remove the leaves.
Use the fragrant sugar in baking, tea or desserts.
Another Easy Use
Place one rose geranium leaf in the bottom of a cake tin before baking a plain sponge cake.
Remove the leaf before serving.
It gently scents the cake.
